Haute Momma



This set was inspired by my day at the park with Leina, The warm flower print reminds me of the botanical garden at our park and the short sleeved knit hoodie makes it easy to move around in but keeps you warm enough on a December day in Orange County. Flat boots are comfortable to run around in and protects your jeans from the occasional puddle. Time may get away from you so its good to wear a watch, especially if you want to have time to get hot chocolate at the local coffee shop.

Sweet Bread Breakfast Strata

On Christmas Eve Morning I was getting ready to make breakfast for my family and I was feeling creative. I wanted to eat something sweet and savory, fluffy and filling, so what else would I make but a Strata.  Using the ingredients that I already had in the fridge I came up with this delicious concoction that both my husband and 6 year old daughter would both enjoy.  This is not an easy feat when there taste buds are polar opposite but I managed to please them both and I got wonderful feedback and dished out plenty on second helpings.  This dish also tastes great the next day heated for 45 seconds in the microwave.

Ingredients

5 eggs
1 cup milk
3 strips of bacon (chopped uncooked)
1/4 cup green onion (chopped)
1/4 sweet yellow onion (chopped)
4 Sweet Hawaiian Dinner Rolls
1 cup cheddar cheese (grated)

Directions

Preheat oven to 375 degrees

Wisc together eggs, milk and 3/4 cup cheese. Next Rip apart sweet rolls in about 1x1" pieces, add both kinds of onion and bacon. Mix all together and pour into a 8x8" dish (greased with butter). Sprinkle remaining cheese on top.  Bake for 35 - 40 minutes until golden brown on top.  Enjoy!!

Flirty Femme

Lolo's Cheesey Chicken Enchiladas with Green Sauce

Enchiladas
 1 lb of Chicken Breast (cooked  & shredded)
10 flour tortillas
1 small can of black olives (sliced)
1/2 cup of white onion (chopped)
2 cups of Colby jack cheese (shredded)

Green Sauce
1/4 cup olive oil
2 cups chicken broth
3 tbs flour
garlic salt  (to taste)
1 cup of Herdez Salsa Verde

Preheat over to 350 degrees

Boil chicken breast in a large 1 to 2 gallon pot.  Remove cooked chicken from the water, place in a colander and shred chicken and set aside. Be sure to save the water that you boiled the chicken in because this will be the broth that you will use for the Green Sauce.  I each tortilla you will put some chicken, cheese, onion and olives. Roll them and place them side by side in a 9 x 13" baking dish.

In a large sauce pan on medium high heat pour olive oil, after a few seconds pour flour into the oil. Stir until you have created a paste, then add garlic salt, slowly add chicken broth, a little at a time, sauce will begin to thicken. Stir continuously and then add the salsa Verde.

Next pour Green Sauce over the rolled tortillas in the baking dish make sure there are no dry spots on the tortillas. Then sprinkle cheese on top and olives.

Bake for 30 minutes and serve with sour cream on the side. Enjoy!!

Cozy Night



It has been raining all day, dinner is finished, homework is done. Now it is time to snuggle up on the couch to watch a movie with hubby.

This is the song I wrote for my wonderful husband, that I sang for him on our wedding day.  Every word comes from the deepest place of love in my heart, but words are just never quite enough.

Savory Potato Pancakes

On this rainy Sunday morning I thought I would put a delicious twist on our typical favorite breakfast. I used my basic pancake recipe only I left out the sweet ingredients and added a few more savory flavors.

1 1/2 cup flour
1 tsp salt
1 1/2 tbs garlic salt
2 eggs
1 1/2 cups potato (grated)
1 cup milk
1/4 cup butter (melted)
1/4 cup fresh Parmesan Cheese (finely grated)


Mix all ingredients together in a medium sized mixing bowl by hand.  Turn stove onto medium high heat, make sure skillet is buttered. Wait until butter starts to sizzle and then place 4" round scoops of batter on the skillet, cook 3 minutes on each side.  Serve hot with applesauce or sour cream. Enjoy!!


Leina's Rainy Day Out

 My darling six year old daughter Leina is quite the fashionista. This set was inspired by her signature look of a baby doll dress paired with basic black leggings. She lives in boots so of course I had to include these stylish yet practical Burberry rain boots and matching umbrella. A fur lined peacoat and a warm beanie is perfect for a little girl who doesn't like to keep her hood on. Leina is all girl but she is not afraid to get dirty, I definitely see some puddle jumping in our near future. And with that Leina is ready for a mommy and me rainy day out.

Last Minute Christmas Shopping

If I was going to head out to shop on this rainy Friday, I would throw on this perfect ensemble of comfortable, chic, practicality. Who said that running errands can't be this fashionable?!

Melt in Your Mouth Meatloaf

Most of my recipes tend to come from a basic recipe that I have decided to Spruce up a bit with whatever I happen to have on hand at home. Last night I made delicious meat loaf paired with creamy mashed potatoes. I wash thinking to myself of how I could make the meatloaf even more fluffy and delicious and I noticed that I had some "Grand’s home style Butter Tasting Biscuits". I decided that instead of having biscuits on the side with butter that I would chop them up uncooked and throw them into the meatloaf mixture.  This little trick put my meatloaf over the edge.  Little tufts of fluffy biscuit with in the already tender meatloaf was absolutely mouth watering.  Bon Appetite!


Melt in Your Mouth Meatloaf

1 lb           ground turkey
½             cup all purpose flour
¾             cup oat bran
4               Grand’s home style Butter Tasting biscuits uncooked
2               eggs
½             cup of grated cheddar cheese
½             cup of ketchup
¼             Worcestershire Sauce
2               tbsp chipotle mustard
2               tsp salt
½             tbsp ground pepper 
1                tsp baking soda



Preheat Oven to 400 degrees

Defrost Ground Turkey. Chop uncooked biscuits into small cubes and mix all ingredients evenly together in a large mixing bowl (mix by hand and not in an electric mixer).  Pour into a loaf pan, sprinkle grated cheddar cheese on top and zigzag ketchup on top of the cheese.

Bake for 45 Minutes edges should be nice and brown.
