Sweet Bread Breakfast Strata

On Christmas Eve Morning I was getting ready to make breakfast for my family and I was feeling creative. I wanted to eat something sweet and savory, fluffy and filling, so what else would I make but a Strata.  Using the ingredients that I already had in the fridge I came up with this delicious concoction that both my husband and 6 year old daughter would both enjoy.  This is not an easy feat when there taste buds are polar opposite but I managed to please them both and I got wonderful feedback and dished out plenty on second helpings.  This dish also tastes great the next day heated for 45 seconds in the microwave.

Ingredients

5 eggs
1 cup milk
3 strips of bacon (chopped uncooked)
1/4 cup green onion (chopped)
1/4 sweet yellow onion (chopped)
4 Sweet Hawaiian Dinner Rolls
1 cup cheddar cheese (grated)

Directions

Preheat oven to 375 degrees

Wisc together eggs, milk and 3/4 cup cheese. Next Rip apart sweet rolls in about 1x1" pieces, add both kinds of onion and bacon. Mix all together and pour into a 8x8" dish (greased with butter). Sprinkle remaining cheese on top.  Bake for 35 - 40 minutes until golden brown on top.  Enjoy!!
