On this rainy Sunday morning I thought I would put a delicious twist on our typical favorite breakfast. I used my basic pancake recipe only I left out the sweet ingredients and added a few more savory flavors.
1 1/2 cup flour
1 tsp salt
1 1/2 tbs garlic salt
2 eggs
1 1/2 cups potato (grated)
1 cup milk
1/4 cup butter (melted)
1/4 cup fresh Parmesan Cheese (finely grated)
Mix all ingredients together in a medium sized mixing bowl by hand. Turn stove onto medium high heat, make sure skillet is buttered. Wait until butter starts to sizzle and then place 4" round scoops of batter on the skillet, cook 3 minutes on each side. Serve hot with applesauce or sour cream. Enjoy!!
LAUREN!!! These are my fav dessert. We used to make them at our annual Christmas party.... we served them with sour cream and berry jam. YUMMY! I think I need to make some for my parents (and maybe Doug if he comes over at Christmas). Thanks for making it feel a little more like Christmas!
